Chef Dominique Ansel and Grand Moulins de Paris have teamed up to launch this premium-grade French pastry flour for home bakers for the very first time. Milled to a finer texture than the standard AP variety, this light and airy flour has a lower gluten content and is perfect for baking cakes and batters with a soft consistency and fluffy texture (think: pancakes, chiffon cakes, sponges, crêpes, and more).
Chef Dominique uses Grand Moulins de Paris flour for many of our pastries in our shops worldwide; up until now, they have only provided their flours to professional chefs and restaurants, and we’re excited that their premium flour will now be available for home cooks too!
Please note: Pastry Flour is not a substitute for AP flour. Pastry flour is milled to a finer texture with a lower gluten content than AP flour, so it is meant for baking lighter and airier items like cakes, sponges, chiffons, etc.
